Fall has snuck in! Well the days are getting shorter that's for sure! ... and the frost is getting ready to show up on the pumpkins!... but we still love the cool crisp air of the Colorado mountains! I have taken my human hiking to some of the most gorgeous places I know this summer, and we have had a marvelous time! .. but I didn't get to go home for over a year to see GrandPupperPops :sad: Perhaps next year, my human says. Flights were just so crowded and confused this year with that "thing" my human worked to protect us from. Love you all! Brody

When I look out over these mountains, it is hard to not be in awe of the intricacies of their creation. To see the height and breath of these "ripples in the earth's crust..." So beautiful, so inspiring, such a gift. Take time this fall and winter to be with family and friends. To share old memories, and to make new ones! We love the coffee we drink! ...and we Roast the coffee we LOVE! We have been on a journey to find outstanding green beans from around the world, roast them to perfection, and share them with our friends, family and customers.

You will find our roasts devoid of the typical over the top acidity of some national roasters. We cup every new batch of beans to optimize the roast profile. Our goal is to let the beans shine, and to bring you an expressive cup of java that will satisfy you to the depths of your soul!

All of our coffee ships roasted whole bean. We recommend grinding right before brewing, and prefer a conical burr or flat burr grinder. As an entry level we recommend the Baratza Encore Conical Burr Coffee Grinder. It is available on Amazon for a little over $100, and the manufacturer typically offers factory referb units before Christmas for under $100. Baratza is a great company with fair priced replacement parts, and great telephone support. We like to support companies that support good coffee!

You will find that temperature matters with our coffee. As your cup cools from the brewing temperature of 192 degF to below 170 degF you will begin to pick up the flavor profiles and overtones that we roasted into each and every bean.

Our packaging keeps your coffee Fresh! We have chosen our bags with much research. The outer layer is simple kraft paper that will gracefully degrade into the environment. The central layer is a metallized polyester that blocks out flavor destroying oxygen and moisture. Our bags carry three unique features: 1) One way vent valve that allows the beans to release CO2 without bursting the bag but keeps aroma destroying oxygen out, 2) Resealable Ziplock zipper to preserve freshness in your home, and 3) A tear off Heat Seal that ensures the bag was not tampered with after sealing at our production facility.

Our name and our logo tell a story too. There is a reason we chose those components of our company! We leave it to the customer to interpret them. As we've shared with some customers at Market... "A national chain snagged the words in the 1950's ... but we now have captured a more excellent roast!"
